Hello lovelies! Today’s post is a bit different than the usual because I really wanted to share with you my favorite fall treat – Pumpkin Spice Coffee Cake! I’m a lover of anything pumpkin spice during the fall season, and I recently ran across this recipe on the blog Joyful Healthy Eats.
This recipe is SO delicious! I loved it, my hubby loved it, and my friends loved it too, so I’m pretty sure that you will ALSO love it! 😉 So without further ado, here is the recipe and a few tips and tricks on how I made my Pumpkin Spice Coffee Cake!
Prep Time: 10 minutes | Cook Time: 40 minutes | Total Time: 50 minutes |
Ingredients:
- 2 ½ cups of all-purpose flour
- 1 cup of brown sugar
- ¾ cup of sugar
- ¾ cup of canola or vegetable oil
- 1 teaspoon of pumpkin spice seasoning
- 1 teaspoon of salt
- 1 teaspoon of baking soda
- 1 teaspoon of baking powder
- ¾ cup of milk
- 1 egg
- 1 cup of finely chopped pecans
- 1 teaspoon of cinnamon
Directions:
- Preheat oven to 350 F
- In a standing mixer, use the whisk attachment to mix together 2 ½ cups of flour, 1 cup of packed brown sugar, and ¾ cup of white sugar
- Next, add ¾ cup of vegetable oil, 1 teaspoon of salt, and 1 teaspoon of pumpkin spice seasoning and mix together until combined
- Remove 1 ½ cup of the mixture and put it in a small bowl (this is for the topping)
- Add 1 cup of finely chopped pecans and 1 teaspoon of cinnamon to the topping bowl and mix together
- Head back to the standing mixer and add ¾ cup of milk, ¾ cup of pumpkin puree, 1 egg, 1 teaspoon of baking soda, and 1 teaspoon of baking powder. Mix at a SLOW speed until there are no more lumps (make sure you scrape the bottom of the bowl and then mix again! I had an issue of some of the batter getting stuck and having to re-mix it.)
- Grease and flour a 13×9 inch glass pan and add cake batter to it
- Next, evenly spread pecan topping over the batter
- Place in the oven and cook for 35-40 minutes (or until a toothpick comes out clean)
- Once it’s done, cut it into squares and serve it with a warm cup of your favorite coffee 🙂
Making this Pumpkin Spice Coffee Cake was really fun, especially since I had my blogger gal pal, Rachel, with me! She cooked up a delicious Corn Chowder Recipe for her blog One Pot Slop, and holy mother of yumminess was it good! I came home on Sunday night from the Portland Fashion and Style Awards (see my previous post here) and scarfed that shit down!
